I've got an HP OfficeJet d135 printer that I use with my Mac, and I've been using the DeskJet CUPS driver that comes with Mac OS X. Unfortunately, that driver doesn't support two-sided printing, and as far as I can tell, neither does gimp-print (to be fair, gimp-print is really cool, it's just that my printer is not really supported by it).
This evening, I came across the HPIJS for Mac OS X driver, which is an open source driver that HP released. The folks at Linux Printing.org have assembled an easily-installable build for Mac OS X, and it supports two-sided printing (select Duplex from the third pull-down menu in the Print dialog). The HPIJS driver supports a lot of HP printers, so check it out if you're having trouble with yours.
